this is a blog about the food i cook for my friends and family, where i'll share experiences about being gluten free (but not anymore), nightshade free (sometimes), and mostly just cooking what i like to eat.

pancakes!

Pancakes are pretty low cal, generally. My main problem with pancakes is that I tend to make so many of them. Um. And then eat them all. Um.

So, today I portion controlled it; I specifically made only a few pancakes each, and we put banana on top too.

This is a pretty basic Betty Crocker no-bisquick recipe, but I've changed it a little to suit my tastes.

Pancakes

2 Servings (I ended up making 3 pancakes each)

1 egg
1/4 cup flour
1/4 cup oats
1tbsp splenda (I just eyeballed this, and you can use sugar instead, it just raises the calories, obviously.)
1/4 plus 2tbsp of skim milk
1tbsp of melted margarine
1 and 1/2 tsp baking soda
1/4 tsp salt
Pinch of cinnamon
Splash of vanilla

Directions

Beat egg until fluffy. Add all ingredients and mix until JUST blended (do not over mix, this ruins pancakes)

Cook over medium heat. It took about 3 minutes each side.

These are slightly thinner pancakes; the batter is a little runnier. They're still delicious though.

Serve with sliced banana and maple syrup.
